Madeleine Meals x Salmon tacos

ZESTY SALMON TACOS

Tender bites of salmon on a creamy avocado base, topped with a zesty sweetcorn and feta mix… what more could you ask for? All served on our gluten-free soft corn tortillas.

We teamed up with Madeleine Meals to create this delicious Salmon Tacos recipe. We can confirm, this is not just for Taco Tuesday. We would happily have this Monday- Sunday. Madeleine is all about showing you that eating healthy doesn’t need to be boring or restrictive and you don’t need to be a trained chef to whip up a nourishing delicious meal like these Salmon Tacos!

Serves 3 to 4 people

Ingredients:
6-8  @cantinadelsabor corn tortillas
400-450g salmon fillets
Spice mix: 1 tsp onion granules, 1 tsp garlic granules, 1 tsp paprika & ½ tsp chilli flakes
Tinned sweetcorn, drained
2-3 tbsp crumbled feta
Optional coriander
2 avocados
1-2 tbsp light cream cheese
Lime
Extra garnishes include: diced spring onion, sliced radishes, sesame seeds & chilli oil

Recipe:

Preheat the oven to 200°C. Remove the skin from the salmon and cut into bite-sized chunks. In a bowl, drizzle with olive oil, spice mix, salt, and pepper. Roast for 8-10 minutes until cooked through and flaky.

Meanwhile, mix sweetcorn, feta, juice of ½ a lime, chilli flakes, salt, and optional chopped coriander.

Whip together the avocado and cream cheese with juice of ½ a lime, a drizzle of olive oil, and salt to taste.

Warm the corn tortillas for 1-2 minutes per side in a dry pan, then assemble the tacos! Spread the avocado base, top with salmon, and finish with the sweetcorn feta mix & any preferred extra garnishes.
