All about: the Blue Corn tortilla

Our yellow corn tortillas have been getting so much love; we thought it was only right to introduce a new one! We went straight to the source: Mexico. Our lovely suppliers in Mexico came back with something seriously special.

Say hello to our new Blue Corn Tortillas.

What makes blue corn.. Blue?

Did you know Mexico grows over 50 native varieties of corn?? This includes the colourful heirloom types of corn such as blue corn… which we are using to make our new blue corn tortillas!

It isn’t dyed, coloured or artificially tinted. It’s naturally rich in colour. The secret lies in anthocyanins; the same antioxidants found in blueberries! This gives the blue corn it’s striking hue and subtle, earthy sweetness.

Every batch is different as there are no preservatives added to keep the colour. So, expect a range of blues, some looking more purple tint to blue-grey.

Where is it from?

Different regions of Mexico have their own tortilla preference. In some parts of the south, you’ll find more blue corn tortillas stealing the show, whereas up north there are more yellow corn tortillas.

Does it taste different?

Made from authentic Mexican blue corn, they’ve got a slightly earthier nutty flavour and that eye-catching colour that makes every taco look like it came from a food truck.

Same traditional methods. Same 3-ingredient simplicity. Just with a colourful twist.  Blue never tasted so good.

How they’re made

Whole corn is cooked then steeped overnight, before being ground into a dough (masa). This masa is shaped and baked into tortillas, the way it’s been done for centuries.
