Carne Asada Wild Mushroom Tacos

These mushroom Carne Asada tacos are fast, fresh and full of flavour. Juicy mushrooms are marinated in all classic Carne Asada spices and then seared until smoky and golden. They’re proof that plant-based can still bring the heat, Cali-style.

Shopping List

250g Wild mushrooms (can also use chestnut, or torn portobellos, whichever you prefer)
50ml Olive oil
Cantina del Sabor Carne Asada dry rub (80g)
Cantina del Sabor Cali Street Corn Tacos

For the salsa

3 Large tomatoes, chopped
1 White onion, diced
1 or 2 Chillies or Jalapenos, diced
Handful of coriander, chopped
Juice of 1 lime
Pinch of salt and pepper

Let's get Cooking

Prep

In a mixing bowl, add your Carne Asada spice rub with the olive oil, stirring to combine.

Add your mushrooms and mix to coat before removing and brushing off any excess coating before cooking.

Oven

For oven roasting, place on a lined baking tray and cook for 10 minutes at 180 degrees.

OR

Air frying

For air fryer cooking, place on foil and cook for 8 minutes at 180 degrees.

Heat your tortillas

While your toppings cook, make sure you heat your tortillas!

In a frying pan over a high heat, spray your pan with oil spray before heating each of your tortillas until you get some dark spots.

Wrap in a tea towl to keep soft before serving

It's salsa time!

In a serving bowl, combine the tomatoes, onion, jalapenos, coriander and juice of your lime and mix together.

Set them aside in the fridge until you're ready to serve, season with salt and pepper before serving.

Load

Serve on your corn tortillas and top with our Don Asado Salsa* (Roasted pepper and Tomatillo) and our fresh Pico de Gallo salsa (This can be made ahead of time- recipe here) for the ultimate taco.
