Corn, Bean & Avocado Salsa

Fresh, colourful, and seriously satisfying - this salsa brings a burst of flavour to any meal. It’s got the sweet crunch of corn, the zing of lime, and creamy avocado to tie it all together. Perfect piled onto tacos, scooped with tortilla chips, or spooned over grilled chicken or fish. Simple, vibrant, and full of flavour - just how we like it.

Shopping List

1 ripe avocado, diced
1 cup sweetcorn (fresh, tinned, or charred - your call)
1 cup black beans, rinsed and drained
1 small red onion, finely chopped
1 red pepper, diced
A handful of fresh coriander, chopped
Juice of 1-2 limes
1 tbsp olive oil
Salt and pepper, to taste

PREP

In a big bowl, toss together the corn, black beans, red onion, red pepper, and coriander.

Gently fold in the diced avocado - go easy so it stays nice and chunky.

Drizzle over the lime juice and olive oil, then season with salt and pepper. Give it a light mix so everything’s coated and colourful.

Enjoy

Best enjoyed right away with warm tortilla chips or loaded on top of your favourite tacos.

Pro Tip

If you’re making it ahead, add the avocado just before serving so it stays bright and fresh.
