Quick Crispy Carnitas Pork Tacos
These crispy carnitas pork tacos are your shortcut to flavour paradise. Tender pork medallions, golden and crisp, piled high with sweet, smoky pineapple salsa for the ultimate weeknight win.

Prep
Add your Crispy Carnitas rub into a bowl and fully coat your pork medallions.
Pan Fry
For pan frying, heat some rapeseed oil (or cooking oil of choice) in a pan. When sizzling, add your pork medallions. Cook on each side for 2 minutes before removing from the pan and allowing to rest for 5 minutes before slicing into strips and serving.
Air Fry
For air frying, line your tray with foil before placing your pork medallions in the basket.
Spray with your olive oil spray before cooking at 180 degrees for 12 minutes.
Allow to rest for 5 minutes before slicing into strips and serving.
HEAT YOUR TORTILLAS!
While your toppings cook, make sure you heat your tortillas!
In a frying pan over a high heat, add a little oil before heating each of your tortillas for about 40 seconds on each side until you golden with some dark spots.
Wrap in a clean tea towel to keep soft before serving.
IT'S SALSA TIME!
In a serving bowl, combine the pineapple, red onion, chillies, coriander and juice of your limes and mix together.
Set them aside in the fridge until you’re ready to serve, season with salt and pepper before serving.
You can also chargrill the pineapple for added crispy texture and enhance the sweetness from the pineapple.
