Mango & Red Cabbage Salsa

Shopping List

250g Mango, diced
¼ Red Cabbage, thinly sliced
2 Spring onions, thinly sliced
Handful of coriander, chopped
Juice of 1 lime
Pinch of salt and pepper

Method

In a serving bowl, combine the mango, spring onions, coriander and juice of your lime and mix together.

Set them aside in the fridge until you’re ready to serve, then add your red cabbage and season with salt and pepper before serving.

Top Tip

If your limes are still quite ripe, roll them on a hard surface using the palm of your hand, this will release the juice and give you much more juice for your squeeze!
