Prep
Add your crunchy chipotle crumb into a bowl and then your olive oil into a separate bowl.
Coat your cauliflower in the oil mixture and then coat in the chipotle crumb, ensuring every inch of the cauliflower is covered.
Air fry
For air fryer cooking, place on foil and cook for 10 minutes at 180 degrees.
Oven
For oven roasting, plan on a lined baking tray and cook for 15 minutes at 180 degrees until crunchy and golden.
HEAT YOUR TORTILLAS!
While your toppings cook, make sure you heat your tortillas!
In a frying pan over a high heat, add a little oil before heating each of your tortillas for about 40 seconds on each side until you golden with some dark spots.
Wrap in a clean tea towel to keep soft before serving.
IT’S SALSA TIME!
In a serving bowl, combine the mango, spring onions, coriander and juice of your lime and mix together.
Set them aside in the fridge until you’re ready to serve, then add your red cabbage and season with salt and pepper before serving.
