Sweet & Spicy Pineapple Salsa

This fresh pineapple salsa is bright and punchy. Sweet pineapple, zesty lime and a little chilli kick, it’s the ultimate balance for your carnitas taco...or eaten straight out of the bowl, it’s hard not to!

250g Pineapple, diced into 1cm cubes
1 Red onion, diced
1 or 2 Red chillis, diced
Handful of Coriander, chopped
Juice of 2 limes
Pinch of salt and pepper

Method

In a serving bowl, combine the pineapple, red onion, chillis, coriander and juice of your limes and mix together. Set them aside in the fridge until you’re ready to serve, season with salt and pepper before serving. You can also chargrill the pineapple for added crispy texture and enhance the sweetness from the pineapple.

Top Chefs Tip

If your limes are still quite ripe, roll them on a hard surface using the palm of your hand, this will release the juice and give you much more juice for your squeeze!
